I probably need to take a look at this web site. I only cook about once a month, and I only make enough for one meal 🙁 I really struggle with this. But the local restaurants love our family.

I have some WONDERFUL freezer meal cookbooks that you can look at. I don't do my freezer cooking all in one day I spread it out.
The library also has some.
Oh I used to do this all the time, only not a month's time. I used to do a weeks worth. Another thing I'd do a lot is if I was making a lasagna, I'd make two instead of one. We'd eat one and freeze the other. Meatballs in sauce freeze REALLY well. I also cook and shred chicken and freeze it in a freezer bag. Many meals call for chopped or shredded chicken, and I can just grab a handful. 🙂
I freeze everything! I even have chopped up onions and peppers- 1. so they don't go bad, and 2. I can't stand taking the time to chop, so I grab and throw in.
On your comment on my blog…I feel the same way! And…of course living in the US, we couldn't live further away from each other. The internet and blogging in particular is a real blessing to me, I am able to learn so much from online friends. (like putting bed sheets inside the pillow cases, I mean, that's the best- haha).
I freezer cook very randomly, so I don't always have something ready in the freezer but when I do, Oh the joys! Even if we were to double one meal a week and freeze it that would be such a help. One freezer cooking website that I love to search around on is http://www.30daygourmet.com/ . I have found some family favorites on this site. Happy cooking!
