Sweet Addition’s Chicken Noodle Soup
Makes 8 – 10 servings
2T. butter
1 med. onion – chopped
3c. celery – chopped
3c. carrots – chopped
2 quarts chicken stock
1 pkg. 12oz. frozen egg noodle
3c. cooked chicken in bite size pieces
1t. dried thyme
1T. dried parsley
salt and pepper to taste
In a large, stock pot over medium heat, melt butter. Add onion, celery, and carrots and saute until tender.
Add stock and bring to a boil. Add frozen egg noodles, and reduce heat to a gentle boil. When noodles are soft, add chicken, herbs, and salt and pepper to taste.
Heat through and serve.
I've been wanting to try a good chicken noodle recipe. I'm looking forward to trying this.
