Coalition for Placer Youth is an organization that the boys and I have been involved in. They held a day long strategy meeting to plan out the next year. I offered to cater their breakfast and lunch.
Breakfast was a breakfast taco bar, with potatoes, scrambled eggs, refried beans, and black beans as the hot ingredients. Toppings: cilantro, scallions, red onion, radish, avocado, pomegranate, cheese, salsa, lime wedges. Fruit was mango with tajin.
Pomegranate arils garnished the sweet potato soup, (along with scallions, and Greek yogurt, if desired). I had two people come up and thank me for placing pomegranate in the soup. They never considered doing it (neither had I before seeing the recipe) and they loved it! This is a photo of my lunch, without the yogurt in the soup or the goat cheese in the salad. Pop and cookies as well.
