We had these for dinner, with collard greens and corn on the cob.  ‘A’ was my assistant. http://www.nutritionmd.org/recipes/view.html?recipe_id=574 They make for a decent, simple family dinner. For dessert, ‘A’ and I made this vegan chocolate pudding.  It had the perfect pudding texture.  Flavor was good, but very rich. http://www.nutritionmd.org/recipes/view.html?recipe_id=781

Yummy Lunch: Raw Pizzas

After our hike at the Confluence Trail, a few of us decided to go to Pachamama’s Organic Cafe for a treat. The boys and I shared two raw pizzas.  The crust was like a thick seeded cracker.  One flavor profile was Greek, and the other was Mexican.  Both were terrific.  Surprisingly, the boys liked the […]

Yummy Pizza

‘R’ and I made pizza together.  It was a definite stretch from our typical cheese-laden gooeyness, but we all declared it (for the most part) a winner. A nutrition class I am taking has taught me to saute items in veggie broth instead of oil.  It really has been a wonderful way to cook healthier […]

Amazing Dan Dan Noodles

This recipe by Joanne Chang is definitely a keeper!  I held back on the jalapeno and siracha, but added them since it was so mild.  Full of flavor!!  I added extra water to make a little more of a sauce than a paste, and used agave nectar instead of sugar.

No Bake Chocolate Chip Cookies

Darn!  I have thrown out the recipe!  I tried mixing the dates and raisins in the Vitamix and it kept taxing the motor.  Since it was such a hassle I decided to nix the recipe.  But, all three boys love these so much, I need to at least try again.  I think this time I […]

Minty Lemon Pesto Pasta

I love to go through magazines and tear out recipes, then adapt them to suit our family’s preferences or us what we have on hand.  This recipe is just that.  It “made the cut” and is something we want to have again. The original recipe had grated cheese, tuna, zucchini, and white beans.  I omitted […]
